Carrot French "Fries"
Serves 2
- 8 medium carrots, peeled and cut into fries
- 1 1/2 tsp olive oil
- Sea salt to taste
- Preheat oven to 425ºF.
- Place the carrots on a baking sheet covered with parchment paper. Drizzle with the olive oil and toss them with your hands to coat. Spread carrots out in a single layer on the baking sheet and sprinkle lightly with sea salt (optional).
- Bake at 425ºF for 18-25 minutes. Checking once or twice to toss to ensure even cooking.
You can get creative with the seasoning for the fries too! Consider adding cinnamon, chipotle chili powder, or cumin.
